Boodjidup Vineyard Viognier, the old growers trick of slicing a cane of bunches off the vine and setting the whole branch aside to dry and shrivel as the berries become engorged with flavour. The deliciously desiccated grapes are crushed and cold soaked to rehydrate the raisined fruit, pressed and sent for a month of vinification at a cool 15°C. Ferments are arrested to retain all the moreish sweetness and extraordinary complexity of cane cut Viognier. Apricot nectars, mango and lychee, her mouth watering lemon honey drop juicyness persists through to a wickedly flavourful finish.

Two Hands sensational Brilliant Disguise Moscato is back again. And what a beauty! A sense of urgency is essential to the creation of this moreish wine, time from vine to bottle is only a few weeks weeks. Italian in style, la Dolce vita through and through, fashioned from parcels of hand selected White Frontignac grapes, Brilliant Disguise is a low alcohol, slightly spritzy style endowed with sweet, lush fruity flavours. Its lovely density and purity of fruit is rarely found in top flight Moscato, cleansing and rejuvenating the palate for the next snip.

On a highland trail, the place to stop and rest when weary is known as a Bothie. Torbreck have been tinkering away at a sweet wine since 2001, the idea was always to construct something that's just a little bit different. This sweeter style of Frontignac exhibits lifted fruit aromatics, lifted perfumes of rosewater and honeydew melon, geraniums and lime, very characteristic of it's Barossa provenance. Bothie is a very versatile wine that can be enjoyed either at the start of a meal or nicely chilled at the end, alongside fresh fruits and cheese, ice creams or sorbet.

Vinsanto is also known as Vino Santo or sacred wine, so named for it's use by clergy and congregation during the holy mass. It has been vinified in Tuscany since at least medieval times and Antinori have been making it for centuries. A pious cepage of Trebbiano and Malvasia sourced exclusively off vines grown to three Antinori estates in Chianti Classico.

She's such a special wine, that a distinctive hand blown bottle was designed just for her. Tempus Two is the definition of romance and desirability, elegance and finesse, all who have countenanced her endowments agree. She was a star right from inaugural vintage, after claiming gold medal and Best Sweet White at the prestigious Boutique Wines of Australia. An opulent elixir, layered with flavours of dried apricot and spice, rancio, honeycombs and marmalade, exquisitely aromatic, lingering on a seemingly endless finish.

Mornington brings something different to the Italianate Moscato, climactically it is blessed with a real advantage. In Australia, there are fewer traditional stylistic conventions to the handling of Moscato, therefore flavoursome and refreshing versions can be crafted which trump the Europeans. T'Gallant fashions their Moscato to display the virtues of simple, high quality winemaking, picking the grapes at a moderate alcohol level, gentlly pressing and not messing about with the wine too much, practices which are all central to the T'Gallant philosophy.

The irrepressible Warburn Estate has been at it again, crafting a divinely light-on the alcohol, yet immensely flavourful, slightly spritzy and teasingly fruity wine from Muscat Gordo Blanco grapes. Warburn Estate's outstanding success has been achieved through it's expertise in blending traditional winemaking skills, innovative techniques and plain, simple knowledge of what tastes good. Crunchy flavours and an spritzy zing around the palate, so easy to enjoy, it just goes down a treat with pear n rocquet salads or cheesey nibbles. Yum.

From a single parcel of late ripened Pinot Gris, planted to a steep half hectare block on Prophet's Home Vineyard. The recipe for making Vin de Paille dates back to 800BC, grapes are selectively hand picked onto racks and dried in the loft of a barn for several weeks, slowly whole bunch pressed and treated to thirteen months of ferment through the action of wild indigenous yeasts. A beguilingly layered and complex wine of extraordinary freshness and imposing structure, only sixty dozen bottles are made with each vintage.

Pressing Matters are inspired by the Mosel style, fashioned to reflect and optimize the outstanding qualities of which Tasmanian Rieslings are capable. Greg Melick has been an avid consumer of the world's finest wines for decades, his own cellar is filled with first growths and he has spent many years touring the world's great vineyards. He is also a wine judge with twenty years national and international experience. Pressing Matters R139 is the lusciously sweet style of late picked Riesling, finished to 139 grams residual sugar, ideal for full flavoured consomme or the richest desserts.

Peter Lehmann's story with Noble Semilon goes back many years, when Andrew Wigan had the good fortune of experiencing vintage within the vineyards at Chateau d'Yquem, home to the greatest sweet white wine in the world. What he had assumed to be spoilage, was in fact Botrytis Cinerea. Traditionally, Botrytis affected wines are the most complex and longest lived of all. The Barossa Valley is an ideal region for late harvest, given the quality of local Semillon and the warm conditions that continue well into vintage.

An exquisite dessert style of Viognier from fruit grown to a very special block of Barossa vine. Fashioned to titillate the senses and delight all enthusiasts of effusive, toothsome wines. Its moreish explosion of jasmine and ginger perfumes, viscosity and lusciousness, presages a richness of dried apricots, marmalade and preserved lemon compote, a refreshing tangy, lemon sherbet acidity contributes refined balance. A wicked aperitif to excite boisterous behaviour, a regal accompaniement to gateaux, steamed puddings or ripe, blue vein cheese.

The most famous and prestigious sweet white wine in the world, vines of the Appellation Sauternes Controlee are stimulated by a unique microclime during autumn, as sunny dry weather of the day alternates with cool fog at night. Due to the extremely low yields of two to three glasses per vine, Sauternes are extraordinarily complex and intense. Offering a wide range of spell binding perfume and flavours, Sauterne develops as it ages, unravelling immensely attractive layers of honeyed characters, toasted nuts and candied fruits.

A lovely little botryris affected expression of Barossa Valley, delicate and delicious, with a fine assortment of fruit tray flavours and alluring aromatics. A wonderful dessert wine that's perfect with Panna Cotta and a delight with your favourite cheese. The palate may be rich, but it's well with a perfect tang of juicy acidity, everything in balance. A good drying citrus finish, a sound and satisfying dessert wine.

Botrytis affected Riesling from the Chromy estate vineyard at Relbia in northern Tasmania. The Botrytis infection is carefully monitored and the grapes are picked when the balance between delicate floral and citrus characters and the richer marmalade flavours of Botrytis is optimum. Weather conditions permitting, Chromy's closely husbanded vines yield limited harvests of Noble Rot botrytis Cinerea, drying the grapes as they hang on the vine, concentrating natural sugars, developing the most exciting perfumes and divine flavours.

By one of the most enduring marques in Cotes du Rhone, Antoine Jaboulet established vines here in 1834, his legacy remains, a catalog of the most renowned Vignoble and Domaines in all France. Every year, an exquisite wine is born from the Jaboulet vineyards, an enticing elixir of dulcet appeal and celestial charm that's shaped by nature. Medieval historian Pliny the Elder referred to this wine in his Natural History, but it was not until the seventeenth century, when the site was planted to Muscat, that Vin Doux Naturel was to become famous.

The aromatic French Vidal is the grape of choice for making Canadian Icewine. A long and steady ripener, it has rich, full aromas and flavours balanced by firm acidity. The ripe berries are dehydrated through constant freezing and thawing, a process that concentrates the sugars, acids and extracts, intensifying flavours and developing immense complexity. A joy for those who are accustomed to the best and appreciate the finest, delightful with fondue, sublime alongside recipes calling on roquefort, mascarpone or gorgonzola. A noble rot Eiswein grown to the inhospitable climes of Niagara Peninsula, where the fruit is painstakingly hand picked under the most severe conditions. Classic botrytised Riesling characters, elegant citrus flavours of developed limes and grapefruit as well as ripe apricot and peach, followed by a slight mineral edge. Inniskillin Niagara is an outstanding experience, a superb and devastating wine, a gift from mother nature to wine enthusiasts everywhere, traditionally served chilled, alongside the most elegant nibbles and all fine faire.

Since winning the most prestigious of all possible international accolades, the esteemed Grand Prix d'Honneur, Inniskillin's Icewines have been consistently lauded and awarded at wine events everywhere. The aromatic and hardy French hybrid grape Vidal, is ideal for making Niagara Icewine. Not only is it a long and steady ripener, it offers rich full aromas and flavours balanced by a bracing acidity. When wines made of Vidal are oaked and aged, the luscious tropical fruit characters are enhanced by creamy vanilla and caramel notes.

Cabernet Franc is an unlikely, but interesting candidate for Icewine. With its brilliant red colour and rich flavours, Inniskillin craft a rare and exceptional, red hued Icewine, perfumed with an abundance of primary fruit fragrances on the nose, brimming with strawberry and cream flavours on the toothsome palate, textural and lengthy, before a smooth lingering finish. Renowned throughout the world of wine for its intensity and richness, Inniskillin is truly a natural wonder, extreme winemaking at its very best.

It is said that the gloriously sweet, concentrated wines which result from grapes infected by Noble Rot Botrytis Cinerea are indeed a nectar of the gods. Ever since crafting their first botrytised wines, Hollick have developed quite a reputation for this rich style, fashioned exclusively from Coonawarra Riesling grapes grown to the Hollick Wilgha Vineyard. The nose exudes a complex array of fragrances, the luscious palate displays honey, mandarin peel and apricot flavours, moving slowly towards an everlasting finish and cleansing drying acidity.

Heggies is an exquisite, though difficult to manage, single vineyard site. The undulating slopes, high in Valley Eden, prevent frosts from settling, such that the unique terroir is encouraged to produce remarkable wines. Fruit is harvested in small, hard won lots, the narrower sections and rows demand to be picked exclusively by hand. A scrupulous sorting is essential, Botrytis affects each bunch of grapes in different ways. The integrity of each parcel is maintained throughout the vinification, ensuring that almost every planting is afforded the opportunity to have a say in the final wine.

Fashioned from choice harvests of white Muscat grapes, White Frontignac and Muscat Gordo Blanco, a substantial serving of which are grown at Grant Burge's own Lily Farm Vineyard in the Barossa heartlands. At less than 8% alcohol by volume, this precocious Moscato is bottled early at low temperatures, to retain the naturally occurring carbon dioxide within a mousse of elegant and refined, dulcetly revitalizing bubbles. An astonishingly equitable match to the most sophisticated bouillon broths and consommé.

Lily Farm is the vineyard in front of Grant's house near Tanunda, planted to vine some thirty years ago. Frontignac is a wine that typifies the fruit from which it is made, showing a distinctively, pleasant grape flavour. Frontignanc is unique amongst varietals in that the wine actually tastes and smells of ripe, luscious grapes. Grant Burge make a style of Frontignac that's more generous and engaging, the sweetness of fruit is matched by an adults only complexity, multi dimensional with vivid aromatics and layers of fruit.

This exuberantly flavoured white could only have been made by the talented people at Warburn Estate. The award winning team have picked the ripest grapes from their magnificent vineyards along the Riverina, vinifying the finest parcels into a luscious Moscato style that's generous with juicy fruit flavours and refreshing vitality before a lip smacking finish. Gossips is an excellent aperitif and drinks beautifully with good food. Treat your Sweet Lips to Thai laksa and Vietnamese pho or at the end of a meal alongside pavlova and ice cream desserts.

Late picked for sweetness, the quality of fruit which merits bottling as a Spätlese, must show the capacity for extended age and development. Richly sweet when enjoyed as an early wine, Spätlese evolve into a cornucopia of fruit flavours and bottle aged characters. The wines of Scharzhofberger originate from a unique mesoclime between Wiltingen and Oberemmel, separated from the greater Saar district by a small tributary which delineates the elite little precinct. A few hectares of vine, yield Riesling of extraordinary richness, regal splendour and intense, dulcet charm.

The stately vineyard at Scharzhofberger covers some thirty hectares of challenging, steeply sloped terrains, its perfect exposures mark it as an exceptional Riesling site without peer. Egon Muller IV retains a quarter of this invaluable terroir, much of the fruit is allowed to achieve a perilous level of ripeness before harvest. The pick of crop is set aside for bottling as a deeply indulgent Spätlese, endowed with wickedly intense fruit sugars and toothsome esters, to be enjoyed in its youth with the most regal desserts, or after a term of bottle age, alongside consommé and the finest cheese.
